Chai Nut Cookie

Our Director of Business Development, Jen, surprised us with this delicious Chai Nut Cookie recipe. Let's just say my first batch of these was gone in under 15 minutes...they are that good. Like most of our recipes, you can have these cookies prepped, baked and in your tummy in under 30 minutes.  Not only are they great for an office snack, they pack well for long hikes, bike rides, or camping trips. 

INGREDIENTS

1 serving Chai or Chocolate Kura

1c nut butter

2/3c coconut sugar

2 eggs

 

DIRECTIONS

Mix ingredients together in a bowl. Form little balls with palms & place on ungreased cookie sheet. Use a fork to flatten. Back at 350 degrees for 10-12 minutes. Enjoy knowing that you finally did something for YOU!

Spiced Sweet Potato Chai Muffins

INGREDIENTS

1/3c chai kura

1 2/3c gluten free flour

1 1/4c coconut sugar

1tsp baking soda

1tsp baking powder

1/2tsp salt

1c sweet potato puree

3/4c ghee (or butter), room temp

1/4c coconut yogurt

2 eggs

1tsp vanilla

 

TOPPING INGREDIENTS

3/4c brown sugar

1/2c walnuts

1 1/2tsp cinnamon

2tbsp buckwheat flour

1/3c butter

 

DIRECTIONS

-Preheat oven to 350 degrees. Spray the muffin tins with coconut spray.

-Mix the dry ingredients. In a separate bowl, mix the wet ingredients. 

-Add the wet to the dry, being careful not to overmix.

-For topping, combine first 4 ingredients in a small bowl. Stir. Using a fork, cut in butter.

-Add the batter to the tins and cover each muffin with the topping. Bake for 12-15 minutes.

-Enjoy knowing that you finally did something for YOU!

Chocolate Oat Cookie Recipe

INGREDIENTS

1 serving chocolate kura

1/2c coconut oil

1c raw honey

4tbsp cocoa powder

2tsp vanilla extract

3c quick oats

1/2c almond milk

1/2c almond butter

DIRECTIONS

-Mix oats & Kura in a bowl; set aside.

-Place coconut oil, honey, almond milk, & cocoa powder in a saucepan over medium heat, stir until combined.

-Bring the mixture to a rolling boil for 60 seconds, stirring occasionally.

-Remove from heat, stir in almond butter & vanilla extract. Stir in the Kura oat mixture & mix until well combined.

-Drop spoonfuls of the mixture onto two baking sheets lined with parchment paper.

-Chill in fridge for 30 minutes, serve & yummm!

Peanutty Protein Bites Recipe

INGREDIENTS

1tbsp vanilla Kura

1c medjool dates, pitted

2tbsp peanut butter

2/3c chia seed

Optional: 1/4c chocolate chips

DIRECTIONS

-Pulse all ingredients in a food processor or blender

-Add 1/4c chocolate chips & roll into bit sized balls

-Makes about 10-15 bites. Store in freezer for best consistency.

-Enjoy!
