Chai Nut Cookie

Our Director of Business Development, Jen, surprised us with this delicious Chai Nut Cookie recipe. Let's just say my first batch of these was gone in under 15 minutes...they are that good. Like most of our recipes, you can have these cookies prepped, baked and in your tummy in under 30 minutes.  Not only are they great for an office snack, they pack well for long hikes, bike rides, or camping trips. 

INGREDIENTS

1 serving Chai or Chocolate Kura

1c nut butter

2/3c coconut sugar

2 eggs

 

DIRECTIONS

Mix ingredients together in a bowl. Form little balls with palms & place on ungreased cookie sheet. Use a fork to flatten. Back at 350 degrees for 10-12 minutes. Enjoy knowing that you finally did something for YOU!

I still remember the moment I discovered avocado could be a chocolate substitute, it was magical. The creamy texture and light taste of avocado pairs perfectly with cocoa powder. If you're looking for something rich to satiate your craving for a savory sweet, you've come to the right place. 

INGREDIENTS

1 serving Chocolate Kura

2 ripe avocados

1tsp vanilla extract

1/4c cocoa powder

1/4c maple syrup

DIRECTIONS

Pit avocados & blend until creamy. Add remaining ingredients & blend until smooth. Place pudding into a container & chill for one hour. Add toppings of your choice, we like to sprinkle in brownie bites if we're feeling fancy! Enjoy!

Lavender Chai Smoothie Recipe

This is how you find zen in a smoothie. Creamy, relaxing and yummm, say hello to the perfect post-workout treat. 

INGREDIENTS

1 serving Chai or Vanilla Kura

8oz vanilla cashew milk

1 banana, frozen slices

small ginger slice

1/8tsp cinnamon

1/8tsp cardamom

1/2 drop lavender essential oil

DIRECTIONS

Add all ingredients to a blender (use a toothpick to dip in lavender oil) & blend until smooth. Pour & enjoy knowing that you finally did something for YOU!

Matchana Nice Cream

INGREDIENTS

1 serving of vanilla Kura

3oz coconut or almond milk

2 bananas, frozen slices

1tsp matcha

DIRECTIONS

Add all ingredients to a blender & pulse until the texture resembles soft serve ice cream; about 3 minutes. Scrape into a container & freeze for 2 hours. Serve & indulge knowing that you finally did something for YOU!

Spiced Sweet Potato Chai Muffins

INGREDIENTS

1/3c chai kura

1 2/3c gluten free flour

1 1/4c coconut sugar

1tsp baking soda

1tsp baking powder

1/2tsp salt

1c sweet potato puree

3/4c ghee (or butter), room temp

1/4c coconut yogurt

2 eggs

1tsp vanilla

 

TOPPING INGREDIENTS

3/4c brown sugar

1/2c walnuts

1 1/2tsp cinnamon

2tbsp buckwheat flour

1/3c butter

 

DIRECTIONS

-Preheat oven to 350 degrees. Spray the muffin tins with coconut spray.

-Mix the dry ingredients. In a separate bowl, mix the wet ingredients. 

-Add the wet to the dry, being careful not to overmix.

-For topping, combine first 4 ingredients in a small bowl. Stir. Using a fork, cut in butter.

-Add the batter to the tins and cover each muffin with the topping. Bake for 12-15 minutes.

-Enjoy knowing that you finally did something for YOU!

Maple Nut Nice Cream Recipe

INGREDIENTS

1 serving vanilla Kura

2 bananas, frozen slices

1/4c maple syrup (we use & love Maple Guild)

1/4tsp vanilla extract

1/4tsp cinnamon

1/2c pecans

DIRECTIONS

-add all ingredients (except pecans) into a blender & pulse until the texture resembles soft serve ice cream; about 3 minutes

-scrape into a container & fold in pecans

-freeze for 2 hours

-serve & indulge!

Kiwi Lime Popsicle Recipe

8oz coconut water

1/2 banana

1 kiwi

juice of 1/2 lime

handful of baby spinach

optional: kiwi slices for an extra good looking popsicle

-add all ingredients to a blender & blend until smooth

-place two kiwi slices into popsicle mold then pour in blended ingredients

-freeze overnight

-enjoy!

Chocolate Oat Cookie Recipe

INGREDIENTS

1 serving chocolate kura

1/2c coconut oil

1c raw honey

4tbsp cocoa powder

2tsp vanilla extract

3c quick oats

1/2c almond milk

1/2c almond butter

DIRECTIONS

-Mix oats & Kura in a bowl; set aside.

-Place coconut oil, honey, almond milk, & cocoa powder in a saucepan over medium heat, stir until combined.

-Bring the mixture to a rolling boil for 60 seconds, stirring occasionally.

-Remove from heat, stir in almond butter & vanilla extract. Stir in the Kura oat mixture & mix until well combined.

-Drop spoonfuls of the mixture onto two baking sheets lined with parchment paper.

-Chill in fridge for 30 minutes, serve & yummm!

Peanutty Protein Bites Recipe

1c medjool dates, pitted

2tbsp peanut butter

2/3c chia seed

Optional: 1/4c chocolate chips

DIRECTIONS

-Pulse all ingredients in a food processor or blender

-Add 1/4c chocolate chips & roll into bit sized balls

-Makes about 10-15 bites. Store in freezer for best consistency.

-Enjoy!
